Makhana production process
Growing and harvesting makhana seeds is a human labour intensive process, though it might not require a high skill level. One Euryale Ferox plant produces nearly 100 makhana seeds, and usually, a hectare of land (or pond) can accommodate about 10,000 plants. There are two types of makhana farming practised in Bihar, pond system and field system. The field system offers a more standardised and controlled environment in terms of quality and food safety. Makhana Research Institute primarily promotes the field system for commercial makhana production.
Makhana fields require a water depth of around 1 ft for makhana cultivation.
Farmers transplant makhana seeds in February and March, depending on the season variations. Harvesting is conducted between August to October by skilled divers. After harvests, collected seeds are washed, dried, sorted before sending them to wholesale markets and food processors.
